Restaurant BASALT is a tale about fire and mankind. The fire that allows us to tame the wild to create something unique. The fire that gave us security, became a gathering point and a gastronomic tool. It’s right here around the fire that we create, eat and live - and we invite our guests on the journey.
The pantry is right on our doorstep. We sound out our surroundings, pick and gather what the seasons give us: fresh, raw and pure. And just like our ancestors have done for millennia, we use fermentation and conservation to refine the natural. A time-consuming affair, but always worth the effort.
